Creeperhost

Pros:
Very robust interface.
Mod support.
Drag and drop files into the server/file browser/file editor.
Fast and friendly Customer Service.
Integrated group pay/donation link.
Cons:
Buggy with editing files (sometimes a page refresh is required to properly save an edit).
Issues with accessing playments referrals and domains.
A bit pricy but you pay for all the pros (but the cupon knocks off almost half the bill for three months).

Update to the config issue: The issue with the config not working off rip when starting a server has been changed, the service now provides and in-depth settings menu for all the server config elements and now correctly assigns players by default. Default settings are set to SU but SV and CV are generated on start out of the box for easy moderation. [NOTE: All server config files set before this update will crash the server and must be deleted and regenerated with the new standard or else the server will crash on player join]. Just as well you are always able to edit the config file directly (after being generated for the first time) via the file explorer in the providers interface.

Gportal

Has a terrible price to performance ratio. Not only does it cost a lot to get a decent amount of player slots, I hadn't actually seen any performance gain from using a more expensive package. Updating the server with them can take a few days as oddly it seems to take them awhile to actually catch up with updates (for comparison updating my server I host literally takes 1 button press on the same day). I finally decided to switch off of them at the time due to them deleting our save when I had opened a ticket for an issue we were having. The one good thing they have going for them is the interface is good looking. The only reason I can think for why so many servers use this hosting provider is because they have a big button on the server hosting page for VS https://www.vintagestory.at/selfhosting/ .

Pingperfect

Used them directly after gportal and was actually decently satisficed with it. The performance was decent, and they didn't limit the amount of ram the server could use oddly enough. I stopped using them because the folks I was playing VS with stopped for awhile so we didn't need the server anymore. The panel was pretty terrible though from what I remember, was straight out of the early 2000s. If you do use them, expect long load times on using the panel but decent performance ingame. It should be noted I didn't use them again this go around due to them increasing their prices and limiting certain things that used to just be the default.

I tried shockbyte this go around instead of ping perfect (due in part to the price increase I prevsiouly mentioned) but mainly because a friend of mine had a sponsorship deal with them at the time. But while they had the best panel out of any of them, and a decent response time on tickets. The performance was TERRIBLE. Easily the worst out of the 3. At that point I was so tired of other hosts for different games (I host servers for a few other games in a discord server) that I decided just to bite the bullet and buy a dedicated server from OVH. Have had 0 issues since but it did cost a ton, and for the average user who just wants to play with friends I do not recommend buying a dedicated server lol.

Bisect respond within 10 mins to tickets. Will do admin work of any kind requested on the VM. Only $1 per extra ram added.
Has never had any down time. Has supported 25+ players with 70 mods with no lag
